Here's a delicious Coconut Orange Cake recipe - light, fragrant, and perfect for spring or summer! Coconut Orange Cake Ingredients For the Cake: 2 ½ cups (310g) all-purpose flour 2 ½ tsp baking powder ½ tsp salt 1 cup (226g) unsalted butter, softened 1¾ cups (350g) granulated sugar 4 large eggs Zest of 2 oranges 1 tsp vanilla extract ½ tsp coconut extract (optional, but recommended) ¾ cup (180ml) orange juice (freshly squeezed if possible) ½ cup (120ml) coconut milk (or regular milk) 1 cup (80g) sweetened shredded coconut For the Orange Glaze (optional but recommended): 1 cup (120g) powdered sugar 2-3 tbsp fresh orange juice Orange zest for garnish Toasted coconut for topping (optional) Instructions Make the Cake: 1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or Bundt cake pan. 2. In a medium bowl, whisk together flour, baking powder, and salt. 3. In a large bowl, cream butter and sugar together until light and fluffy (3-5 minutes). 4. Beat in eggs one at a time. Add orange zest, vanilla, and coconut extract. 5. Combine orange juice and coconut milk in a separate cup. 6. Add dry ingredients to the butter mixture in 3 parts, alternating with the juice/milk mixture, beginning and ending with dry ingredients. 7. Fold in shredded coconut. 8. Pour batter into the prepared pan and smooth the top. 9. Bake for 40-50 minutes (Bundt may take longer), or until a toothpick inserted comes out clean. 10. Cool in pan for 10-15 minutes, then transfer to a wire rack to cool completely. Make the Orange Glaze: 1. Mix powdered sugar with orange juice until smooth and pourable. 2. Drizzle over the cooled cake. 3. Sprinkle with extra orange zest and/or toasted coconut if desired. Tips & Variations: For a stronger coconut flavor, use coconut oil instead of butter and add extra shredded coconut. You can turn this into a layer cake with coconut cream or orange curd filling. #orangecake #orangecakerecipe #caketok #cakedesign #cakeorfake #caketutorial
