Berry French Toast Kebabs and I can never have my French Toasts the same way again 🍓🫐🍯🍞I made these using Wholemeal bread! I am really in love with how these turned out and the bread to berry ratio is everything 😮‍💨 The wholemeal bread (I am using Sunshine’s Whole Grains Ultra-Fine + Enriched White Bread) was able to soak up all that egg milk mixture nicely as well, and I would say the challenge has been going really well and easy for me! Especially considering how I enjoy the equally soft texture and the light earthiness of the wholemeal breads, it might be time to up the difficulty a notch 🤔 On a side yet important note, make sure to add cinnamon and vanilla for your French toast, it really gives such a nice boost of flavour and fragrance 😄 Recipe (more available in profile / blog too, including cup measurements!) Ingredients - 6 - 7 Slices of Bread - 2 Eggs - 150ml Milk - 1 Tsp Vanilla - 1 Tsp Cinnamon - Approx 40g Butter - Assortment of Berries (approx 150g total). I used blueberries, raspberries and strawberries - Honey / Maple Syrup For blueberry compote, 1 cup blueberries, 1 tbsp water, 1 tbsp lemon juice. Flavour with honey. Steps 1. Whisk together 2 eggs and milk. Then, whisk in vanilla and cinnamon 2. Dip each slice of bread 1 - 2 mins on each side. Shake off the excess 3. Heat up your frying pan to medium / medium-high heat and melt a tbsp of butter. Once fully melted, cook each french toast for approx 2 - 3 mins on each side until nicely brown 4. Set aside the completed toast and do re-butter the pan as needed for subsequently toasts 5. Slice each french toast into 9 - 12 mini slices and skewer them with berries 6. Serve with honey and enjoy! 7. If making blueberry compote, simmer blueberries with water and lemon juice for 8 - 10 mins. I flavour with honey near the end. The compote will thicken further after it sits at room temp! For those who are curious on why 21 days, it’s because it takes 21 days to form a habit! Warm the milk, butter and vanilla together at low heat until all butter has melted. Set aside to cool 2. Separately, mix together the eggs, sugar and cinnamon. Pour the egg mixture into the cooled milk mixture  3. Warm the milk, butter and vanilla together at low heat until all butter has melted. Set aside to cool 2. Separately, mix together the eggs, sugar and cinnamon. Pour the egg mixture into the cooled milk mixture  3.  5. Transfer the batter to the baking tin (I used 8 inch round) and bake the cake at 160C, 52-55 minutes. If you observe the cake browning too much half way, place an aluminium foil over. 6. Cool at room temperature for an hour before glazing with honey and topping with almonds.  This cake softens and tastes better after being stored at room temperature overnight!
