![Breakfast Sandwiches Around the World Ep 2. India - Bombay & Egg Curry Sandwich When I first discovered the Bombay Sandwich I was intrigued. I had never heard of it before and despite being a huge meat lover, I do also love veggies and I had never worked with green chutney or chaat masala so those were new ingredients I was excited to try. This is exactly why I decided to do an inspired by places Around the World series, mainly to discover new flavors and ingredients. Apart from this, making curry from scratch is something else I’ve always wanted to try to do but had always felt intimidated by all the spices. The egg curry was a great opportunity to finally try and through this, I believe I now have the foundational spices in my pantry to make a lot of other curries. An Indian friend of mine had told me that the onion and tomato purees and much of these key spices are the foundation to many other curries. After this experience I will never resort to pre-made jar curries again because curries from scratch is the only way to go! Where around the world should I breakfast sandwich next?
