Fried Barbounia (Red Mullet) 📕Recipe here: ❂ Ingredients: 8 Medium sized red mullets 1 Cup all-purpose flour Salt/Pepper to taste 1 Tbsp Oregano 1 Tbsp Paprika Olive oil for frying the fish (depending on the size of frying pan) For sauce: 1 Sprig cherry tomato 1/2 Shallot onion 1 Tbsp Fresh Parsley 1 Tsp Oregano 1 Tbsp Balsamic Glaze Olive oil Salt/Pepper to taste Tzatziki sauce: 4 Tbsp Greek yogurt 1 Fresh cucumber 1 Sprig of Fresh dill 1 Cloves of garlic 1 Tbsp Lemon juice Salt/Pepper to taste ❂ Cooking process: ⁃ For tzatziki: Place grated fresh cucumber (well pressed), greek yogurt, garlic, dill, salt/pepper and lemon juice in a jar. Mix everything with a blender right in the jar. ⁃ For sauce: Cut the tomatoes into rings, finely chop the onion and parsley, then add the salt/pepper, oregano, olive oil and balsamic glaze and mix well. ⁃ Scale and gut the fish or ask your fish monger to do it for you. ⁃ Wash and drain the fish. ⁃ Mix the flour with some seasoning and coat the fish. Shake off excess flour. ⁃ Heat the olive oil, at least 1/2 inch , in a non-stick frying pan and fry the fish on both sides. ( around 5 min one side) ⁃ When cooked place onto kitchen paper to absorb excess oil. ⁃ Squeeze some lemon juice on top and serve with a sauce.
