🚨 Grilled Miso Sambal Corn Ribs (recipe below!)  Ingredients  - 4 ears of corn, shucked  - 2 tbsp neutral oil (I like to use @algaecookingclub )  - ½ tsp @diamondcrystalsalt (kosher salt) - 1 stick (8 tbsp) unsalted butter - 1 ½ tbsp white miso paste  - 1 ½ tbsp sambal oelek (@huyfongfoods chili garlic sauce, can sub with sriracha)  - 1 tsp lime zest  - ½ tsp sesame oil  - 2 tsp chives, for garnish  - 1 tsp toasted sesame seeds, for garnish  - 1 tsp gochugaru or Aleppo pepper, for garnish  - Lime wedges, for serving  Preparation  1. Heat grill to medium-high. 2. Using a sharp knife, trim off both ends of each ear of corn to expose cob. Stand corn up on the wider base and carefully cut corn in half down the center of cob. Stand each half on its end then cut again into quarters. I like to to bang knife with palm into the cob to lock it in then rock the knife while applying downward pressure from the top. 3. Transfer corn ribs to a large bowl or tray. Toss with oil and salt until well coated.  4. Arrange corn ribs kernel side down on the grill and cook over direct heat until corn is cooked through, looks slightly charred, and ribs begin to curl upwards, 3-5 minutes.  With tongs, turn corn over to one side and grill until the side is slightly charred, about 2 minutes. Flip corn ribs and repeat on other side. Transfer corn ribs to a large bowl.  5. Melt butter over medium-low heat, whisk in miso and sambal oelek. Remove from heat and stir in lime zest and sesame oil.  6. Pour butter mixture over the corn ribs and toss until well coated. Transfer corn ribs to a serving dish.  7. Top corn ribs with chives, sesame seeds, and gochugaru. Serve with lime wedges.  Note:  If using oven heat to 375F and bake for 25-30 min, until golden and cooked through.
