@heykarabae: Cant go wrong with this pasta salad 🥗❤️‍🔥🫶 Cashew sauce: Yellow onion Jalapeño 4-5 cloves of garlic 1/2 cup of raw soaked cashews 4 tablespoons nutritional yeast Juice of a lemon Salt and pepper Water to thin it out Your pasta of choice. 😄 1 bell pepper 1 large cucumber Half of a red onion 2 heads of romaine lettuce 2 carrots 1 block of extra firm tofu Fresh parsley Dried dill Put cashews in a bowl and cover them with boiling water and a lid/plate. Sauté onion, jalapeño, and garlic in a pan with salt and pepper (I cook them in coconut oil). Add the mixture and drained cashews into a blender with the salt, pepper, lemon juice, and water. Taste and adjust seasoning or thickness. Add to cooked pasta and mix. Chop up all your favorite veggies and add them to the bowl. Dry tofu well and fry in a pan, seasoning both sides.
