Chop into smaller sections the add to blender and blend for one minute. Pour into a bowl through a five mesh sieve or cheesecloth. Use a whisk or spoon to push any extra liquid through until you are left with watermelon pulp - at this point you can add optional sugar to sweeten more. Reserve the leftover strained juice for another use (make a fun cocktail or enjoy alone with ice). Soak a sheet of parchment paper in water for 30 seconds, then lay on a sheet pan. (This will help it prevent from wrinkling). Pour your pulp on the parchment paper (about 1/8th of an inch thick) and tilt your pan to evenly coat. Tap your pan on the counter a few times to evenly level the pulp. Bake in the oven at your lowest setting (I baked mine at 170°F for about 4 hours). It’s ready when the top is dry to touch and no longer tacky. Use scissors to cut into long strips about 1 inch wide then then roll your strips up. Stores in an airtight container at room temperature up to 6 months. Enjoy!
