@threelittlegoats: While I love making cheddars, Asiago & other hard cheeses… I’m impatient and sometimes want a good cheese now… not 6 months from now. So when I have a little extra milk, I make queso fresco. It’s a beginner friendly recipe and doesn’t take all day in the kitchen to make and it doesn’t have to age in the cheese cave for months before it can be enjoyed. It has a mild flavor, but you can add herbs or peppers to really make it yummy. It also melts beautifully and can be sliced and fried. #cheese #cheesemaking #homemadcheese #homesteading

If you don’t have access to raw milk, whole milk from the store can be used.

one of my aunt's in PR used to make this all the time when I was kid. pretty sure my uncle's owning dairy farms was a factor in how often she made it

Do you maintain it at 90 degrees the whole time? Or turn off the heat until it’s time to cook the curds?
