@_lacebakes_: Potato + Rosemary Focaccia: a carb-on-carb CLASSIC! 🥔🌿 To make this, first choose your favourite base focaccia dough - my overnight, same-day and sourdough focaccia recipes are linked in my bio). While the dough is proofing in the tray, thinly slice any potatoes you have you have on hand and then soak the slices in cold water. This helps to get rid of some of the starches so they crisp up nicely when they bake. Pat the potatoes dry and then coat with a little extra virgin olive oil. Chop up some fresh rosemary and set aside. When the dough is finished proofing, sprinkle on the rosemary, drizzle with extra virgin olive oil and dimple the dough. Now place as many of those potatoes you’d like across the top of the dough. Drizzle with more extra virgin olive oil and a sprinkle of flaky sea salt and bake as instructed in the focaccia recipe. The tops of the potatoes and exposed bread should be going a nice golden brown when it’s done.
