Katsu Sando aka The Ultimate Schnitty roll Ingredients: makes 2 - 1 chicken breast - 2 eggs - 1 cup flour - 1 cup panko bread crumbs - 1/4 small green cabbage - Kewpie mayo - Tonkatsu sauce - 1/2 lemon, juice only - 4 slices Japanese milk bread- Shokupan 1. butterfly the chicken breast, cover with plastic wrap and beat to an even thickness using a rolling pin or anything heavy 2. Season chicken breast fillets on each side with salt and fresh black pepper. Make sure to press the seasonings into the meat 3. Coat in flour, making sure to get a thin layer and to shake any excess off. Coat in beaten eggs, draining excess and finally press into the panko crumbs. Apply quite a bit of pressure to ensure the crumbs stick 4. Fry in oil heated to 180°C/350°F for 1-2 minutes each side or until deeply golden brown. Remove from the oil and place on a wire rack set over a baking tray to drain excess oil. Season with a pinch of salt 5. Slice green cabbage as thinly as possible and toss in a bowl with the juice of 1/2 a lemon 6. Korean Pork Potstickers 🥟 Ingredients: - 500g pork mince - 2 cups green cabbage, chopped fine - 4 tbsp gochujang (Korean chilli paste) - 1 tbsp fresh ginger, grated - 3 cloves garlic, grated - 2 tsp rice wine vinegar - 1 tsp sesame oil - 1.5 tbsp soy sauce - 1/2 tsp msg (optional) - 1 egg - Gyoza wrappers Crispy skirt - 2 tsp corn starch - 2 tsp plain flour - 2.5 tbsp water 1. Combine cabbage, pork mince, gochujang, ginger, garlic, rice wine vinegar, sesame oil, soy sauce, msg and egg in a bowl. Mixing well with your hands 2. Add roughly 1 tbsp of mixture to the middle of a gyoza wrapper, wetting a semi-circle around the outside using a slurry of cornstarch and water. Starting from the left press the dough firmly together and crimp along one side of the dumpling. Repeat the process with the remaining dough and filling 3. Heat up a small frying pan on medium low and add a small amount of cooking oil. Sear the dumplings on the bottom until golden brown then pour in the skirt slurry and immediately cover with a lid for 7 minutes 4. Everybody loves these balls! Marinara sauce: - 1 brown onion, finely diced - 3 cloves garlic, minced - 2 tsp chilli flakes - 1 tbsp oregano - 2 bottles passata (1L total) - Salt to taste 1. Sweat onion in olive oil on medium heat for 2 minutes, add garlic and chilli flakes and cook for another 2 minutes, stirring constantly. 2. Pour in passata then fill the bottles 1/3 of the way with water, give them a good shake and pour into the pot to get all of the remaining sauce out 3. Add oregano and a good pinch of salt, bring to a simmer Meatball mix: - 500g pork mince - 500g veal mince - 100g bread soaked in milk for 30 mins (remove any milk that doesn’t get absorbed) - 1 tbsp fresh oregano - 3 cloves garlic, freshly grated - 1 cup fresh Parmesan cheese - 1 tsp black pepper - 1/2 cup parsley - 1 egg 1. Soak bread in milk for 30-60 mins before mixing 2. Combine everything in a large mixing bowl by hand. Mix for about 5 minutes until the meat appears spreadable and slightly sticky 3. Roll into 15 evenly sized balls. If the mixture sticks to your hands, slightly wet them so the meat won’t stick 4. Arrange on an oiled tray and grill in the oven for 5-10 mins per side to achieve good colour on all sides 5. Add to simmering sauce and let cook for at least 30 mins but realistically forever.
