@nowayjosecuisine: Barbie Enchipotladas! 💕 Here is the Barbie version of my Enchipotladas; you can add more Chipotle if you want it spicier or skip it for a kids' version. Recipe⬇️ Ingredients: -For the chicken 8 boneless chicken thighs 2 tbsp chicken bouillon 3 garlic cloves ¼ onion 2 celery sticks 1 jalapeño Pink food colorant 8 cups Water Salt -for the sauce 4-6 canned chipotle peppers ¾ cup Chicken stock 2 cups Mexican crema or sour cream 1 tsp onion powder 1 tsp garlic powder ¼ tsp cumin -for the tortillas 2 cups instant corn masa mix 1 tsp salt 1.5 cups chicken stock Pink food colorant -to fry the chicken 4 tbsp cooking oil ¼ onion, thinly sliced 2 garlic cloves, minced. Chicken stock, optional for moisture Neutral cooking oil to fry the tortillas. -for toppings Crumbled queso fresco Chopped onion. Preparation: In a pot, add all the ingredients for the chicken and boil for 20 minutes on medium heat. Pull out the chicken and let it cool down to shred it. Strain the chicken stock. Mix the ingredients for the tortillas but add the chicken stock little by little; you might need less or more, but ensure to make a slightly sticky dough that won’t get stuck on your fingers; form balls of about 2 tbsp, and press as thin as possible in the tortilla press or two plates like cutting boards or plates; cook them in a griddle on low heat and place them in a folded cloth. For the sauce, add in the blender the chipotles and chicken stock with pink colorant and blend it well; strain the sauce into a pot to avoid seeds or big pieces, add the crema as much as you need for the desired consistency, and cook on medium heat stirring often until it gets hot.
