@chefdwightsmith: Spaghetti Carbonara This pasta is so good and very easy to make. It will definitely satisfy a late night craving but is the perfect option for a nice dinner. Recipe; 200 grams spaghetti 50 grams guanciale (substitute pancetta if Guanciale is hard to find) 40 grams pecorino Romano 3 egg yolks Cracked black pepper Salt In a small bowl grate your cheese. Then add your egg yolks and black pepper. Stir this mixture until fully combine. Slice your guanciale into even cubes. Render your guanciale down in a sauté pan. Once it’s fully cooked remove from pan and strain off fat and add the fat to your egg mixture. Add your fully cooked spaghetti to that pan with the heat turned off. Add your egg and cheese mixture and 50ml of pasta water. Stir in and work the pasta to help the sauce start to thicken up and emulsify. Add your guanciale back to the pan. Taste and adjust seasoning if necessary. Add more pecorino cheese and black pepper and plate the pasta once the sauce starts to thicken.
