@jessbloom_: My current fave lunch meal prep 👏🏽 This has been my go to for the last 2 weeks since giving birth! Even though I work from home, looking after a baby as well it’s SO handy having lunch ready to eat with one hand in the fridge (otherwise you inevitably just live off snacks which isn’t always very satiating!) This is super easy and you can just throw whatever veggies you have in there 🥰 this is what I used; Makes 4 portions; 150g pasta (pasta of your choice!) 300g chicken breast 2 large tomatoes 100g cucumber 2 celery sticks 150g courgette 2 tbsp green pesto 1 lemon juice 20g pine nuts Pink salt and pepper Per portion 400 cals 32g protein 35g carbs 15g fat I poach the chicken in boiling water for 14 minutes and then shred it apart with 2 forks, cook your pasta as per packet instructions and finely chop any veggies you’re using. Combine all ingredients together and leave in the fridge for up to 3 days!
