@chicago.dietitian: Lentil & Zucchini Salad 🫶🏻 Ingredients 2 zucchinis, sliced into 1 inch thick rounds 1 yellow squash, sliced into 1 inch thick rounds 2 cloves garlic ½ lemon, sliced 16 oz lentils (I used Trader Joe’s steamed lentils) 1/2 cup of fresh cilantro and parsley, roughly chopped 1/3 cup fresh herbs (I used fresh oregano, basil and sage), roughly chopped 1/4 cup pitted kalamata olives 1 cup rainbow chard, finely sliced 1/3 cup almonds, crushed 2 tbsp red wine vinegar ½ cup Greek yogurt 1/4 cup dill, roughly chopped Kosher sea salt & black pepper 4 tbsp extra virgin olive oil Method Heat a large frying pan over a medium high heat and add the zucchini slices, seasoning with salt and pepper. Cook for 1-2 minutes each side to caramelize and cook through. Halfway through cooking add the garlic and lemon slices to the pan to caramelize and salt and pepper. Set aside on a plate once cooked. In a bowl, combine the lentils, olives, herbs, zucchini and all the contents from the pan and rainbow chard. Add juice of the remaining half lemon, add vingear and drizzle with the olive oil.
