Salteñas 🥟🇧🇴 Bolivia has some seriously delicious dishes, and Salteñas are no exception! These mouthwatering empanadas are filled with beef, chicken, or vegetables and baked to perfection. 😍 INGREDIENTS: Filling: 400g Chicken breast  Water to cover  250g Onion  3-4 Cloves Garlic  Handful of Parsley 3 Chilli peppers (optional) 250g Potato  100g Peas 50g Raisins  1tsbp Sugar 1 ½tsp Salt  1tsp Cumin 1tbsp Oregano  ½tsp Black pepper  1 Bay leaf  15g Gelatin powder  2 Eggs (hard-boiled) 20 Green Olives  Dough: 500g Flour  150g Sugar ½tbsp Salt  1 Egg yolk  100g Butter  175g Water  METHOD: 1. Start by placing your chicken in a pot. Cover it up with water, add salt and pepper and cook until chicken is fully cooked.  2. In the meantime, chop up your veggies.  3. To a pan add oil, chipped up onion and sauté for a bit. Then add garlic and parsley along with your chillies. 4. Shred your chicken cooked chicken and add it to your vegetables.  5. Cover everything with 500ml of chicken broth (saved from boiling the chicken). Add your potatoes, peas, raising and all your seasonings (salt, sugar, cumin, oregano and bay leaf). Simmer for 5 minutes.  6. After 5 minutes, taste everything and add more salt or seasonings if needed.  7. Remove the bay leaf and add in your gelatin (mixed in cold water). Cook for 1 minute, then turn off.  8. Let it cool down and place it in an airtight container. Add your hard-boiled eggs and let it chill in the fridge for about 4 hours.  9. Prepare your dough by mixing flour, sugar, salt, egg yolk, butter and water. Mix and knead until everything comes together.  10. Let the dough rest for 15 minutes. After that, form 50g dough balls and let them rest for another 15 minutes.  11. On a floured surface make your dough discs. They should be about 12cm in diameter. Refrigerate them until you are ready to use them.  12. Form small salteñas by wetting the edges of the disc, placing a tbsp of filling in the middle, 1 olive and closing it. Fold the edges as shown in the video.  13. Brush your salteñas with egg wash (1 egg + 2tbsp water) and bake them at 230°C for 20-30 minutes.  14.
