@matchaonomu: Matcha Tiramisu 💚 Ingredients: Mascarpone Cream: • 150g Mascarpone • 120g Heavy Cream • 40g Egg Yolk • 25g Sugar • 12g Water Matcha Syrup: • Ladyfinger • 6g Matcha • 60g Hot Water • 20g Sugar • 60g Milk • 5g Sweet Marsala (optional) Instructions: Whip chilled heavy cream until soft peaks form. Add mascarpone and whip until medium peak. Leave and chill the mixture in the fridge. Pâte à bombe: egg yolk + sugar + water. Heat until it reaches 80°C, continuously mixing. Pass the mixture through a sieve to make it smooth. Whip it until pale and add onto the mascarpone mixture. Combine the mixtures together and refrigerate until use. In a tea bowl, sift matcha powder and add hot water. Whisk until smooth. Add sugar and whisk. Add milk and marsala (optional) and whisk again. Dunk the ladyfingers into the Matcha Syrup and place them at the bottom of a 180mL wooden masu box or square container. Scoop out the mascarpone cream and spread it on top of the ladyfingers. Leave in the fridge for a couple of hours to set. Sift matcha on top before serving and enjoy!
