CHEESY MEXICAN RICE 🍚 One of my favourite dinners of all time! It’s so good and very tasty. Save for later☝🏼 •416 kcals per portion •41g PRO, 45g CHO, 11g FAT Serves 4: -1 tbsp of butter -1 onion, diced -400g of uncooked chicken breast, diced -1 red & green pepper -2 tsp of paprika -1 tsp each of cumin, chilli powder & garlic powder -1/2 tsp each of onion powder & cayenne pepper -1 tsp of sugar -200g of uncooked basmati rice -2 tbsp of tomatoes paste -1 reduced salt chicken stock cube mixed in 400ml of boiling water -40g of sweetcorn -50g of cheddar grated (half for the middle & half for the top) -20g of parmesan -Coriander, for garnish (optional) Method: 1. Spray a pan with oil. Add the red onion and chicken with a dash of water. Add the pepper and let it cook for 5-10 minutes. 2. Mix in the seasoning. Add the rice, chicken stock, tomato paste and sweetcorn. Simmer for 5 minutes then cover with a lid. Reduce the heat and let it cook for another 10 minutes until the rice has absorbed all of the water. 3. Once cooked, mix in half of the cheese. The pat down and top with the parmesan and rest of the cheddar. Cover again to melt the cheese. 4. Serve into 4 portions and top with the coriander leaves. What you need: *makes 5 servings* 1 Tbsp olive oil 1/2 medium onion, chopped 1 lb grass-fed ground beef 1/2 packet Taco seasoning or other combo of seasoning 1 15 oz can diced tomatoes (not drained) 1 cup fresh or frozen corn, drain and rinse if canned 1 15 oz can black beans, drained and rinsed 1 cup shredded Monterey Jack cheese, or cheese of your choice Sea salt to taste Optional add-on: cilantro 1 - Add olive oil to a medium to large pan. 2 - Add diced onion and sauté for a couple minutes. 3 - Add ground beef, break into peices and cook until no longer pink on the inside. Add the taco seasoning or seasoning of choice. 4 - Add corn, black beans and tomatoes.
