@cookinginthemidwest: Chicken Marinara Sandwiches are so good and easy to make! Recipe 2 chicken breasts 1/2 tsp each of salt and pepper 1 tsp each of garlic powder, paprika, and Italian seasoning 6 TBSP butter Marinara Sauce 4 Buns Shredded or sliced mozzarella cheese Fresh parsley 1 TBSP minced garlic Steps -Butterfly cut chicken breasts to make them thinner. -Season with salt, pepper, garlic powder, Italian seasoning, and paprika on both sides. -Heat skillet with 2 TBSP of butter over medium high heat and quickly sear chicken (about 2-3 min on each side) in the skillet. This won’t fully cook the chicken. -Remove from heat and add a good spoonful of marinara on top of each piece of chicken. -Top with sliced or shredded mozzarella cheese. -Bake in the oven at 400 degrees for about 10 minutes or until it reaches an internal temp of 165 degrees. -While the chicken finishes cooking, combine 4 TBSP butter, 1 TBSP minced garlic, and some fresh chopped parsley in a bowl. Stir together well. -Spread the butter mixture on the buns and toast them in a skillet over medium heat until golden brown. -Build sandwiches and top with more parsley. Enjoy!
