Recreating Duan Jia Xu’s lemon tart 🦊 🍋 Ingredients: Tart Shell: 40g of Butter 25g of Powdered sugar 1g of Salt 15g of Almond flour 70g of Cake flour (low-protein flour) 15g of egg Lemon/Lime Curd Filling: 1 Whole egg 30 to 35g of Lemon/Lime juice 40g of Sugar Some lemon/lime flake 50g of Butter 1 lime (sliced) Gelatin layer: 80g of warm water 1/2 tsp of gelatin powder 5g of sugar Some lime flake 1. Mix softened butter and powdered sugar together. 2. Sift the cake flour, salt, and almond flour, continue to mix until well combined. 3. Incorporate egg into the dough. 4. Wrap the dough with plastic wrap and refrigerate it for about 1 hours to allow it to rest and chill. 5. Once the dough has chilled, place it between two sheets of parchment paper, then roll it out. Give it a brief 10-minute chill in the fridge to maintain its shape. 6. Preheat your oven to 320°F (160°C) to prepare for the baking process. 7. Place the rolled out dough on the tart pan. 8. Prick the bottom of the tart with a fork to prevent excessive puffing during baking, then bake the tarts for about 15 minutes at 320°F (160°C) in the oven. 9. While the tarts are baking, prepare the lemon curd filling. In a clean bowl, whisk together egg and granulated sugar until the sugar dissolves completely. Add the lemon juice. Then cook it over low heat until the mixture thickens. Mix the butter into the lemon curd, ensuring it's thoroughly combined. 10. Once the tart is done baking , allow it to cool down before proceeding further. 11. Fill the tart with the lemon curd filling. 12. Let the filled tart chill in the refrigerator for around 15 minutes, allowing the lemon curd to set. 12. Arrange thin slices of lime on top of the tart for decoration. 13. In a separate bowl, mix together some lime zest,gelatin powder, and sugar with warm water until well combined. 14. Pour the liquid mixture onto the tart, then refrigerate it for about 30 minutes to let the gelatin layer set. 15.
