the food i grew up with • ep 1 - bagare baigan  recipe: ingredients:  6 small eggplants  1/2 cup oil  3-4 small tomatoes  1 medium sized onion  10-15 curry leaves green chillies - 2 sesame seeds 1/4th cup peanuts - 1/4th cup poppy seeds - 1/8th cup dried coconut - 1/2 cup mustard seeds - 3/4th tsp nigella seeds - 3/4th tsp fenugreek seeds - 3/4th tsp cumin seeds - 3/4th tsp ginger garlic paste - 1 tbsp  turmeric powder - 1/2 tsp salt to taste  red chilli powder - 1 tsp  tamarind pulp - 1/2 cup cilantro - 1/4th cup chopped  method: 1. Roast these ingredients - sesame seeds, poppy seeds, peanuts, 1/2 onion sliced, dried coconut. let them cool down and then grind into a paste and keep aside.  2. ⁠in a pot, add the eggplant and fill it up with water and add 2 tsp salt 🧂. sometimes eggplant can have a bitter taste and this step helps get rid of that. leave it in for 10 minutes and then drain it. slice them from the bottom as shown in the video  3. ⁠in a deep pan, heat up 1/2 cup oil (you can absolutely use less if you prefer). fry the eggplant for about 5 minutes until they soften a bit and keep aside.  4. ⁠in the same pan, add nigella seeds, cumin, mustard, fenugreek seeds, curry leaves, and let it splatter a bit and then add 1/2 sliced onion.  5. ⁠sauté for a minute then add the ginger garlic paste and sauté.  6. ⁠then add the ground paste we put aside earlier. and mix thoroughly.  7. ⁠add tamarind pulp, red chilli powder, salt to taste, turmeric powder and mix well. roast on a medium to low flame until the oil separates.  8. ⁠add the fried eggplants in, add about 1/2 cup water, a few more curry leaves (5-6), 2 slit green chilies and a handful of cilantro.  9. ⁠add the same kind of slits on the tomatoes and add them in as well. cover and cook until the tomatoes and eggplants soften and it’s ready to serve! #hyderabadifood #indianfood #bagarebaigan #mirchiyokasalan #biryani
