Can't wait for you to try it! 🥥🍫🍪 Here is how to make it: ½ cup unsweetened shredded coconut ½ cup chocolate chips (use a low sugar option for less sugar) 1 tsp coconut oil 10-12 pitted medjool dates 2 Tablespoons cashew butter 1️⃣ Preheat oven to 350°F. Spread the shredded coconut onto a baking sheet for toasting. Place in oven for 5-6 minutes, until coconut is a golden brown color. Make sure to stay in the kitchen watch the coconut, as it burns really easily. Alternately, you can toast the coconut in a pan on the stove top. 2️⃣ Line a small baking sheet with parchment paper. Split dates open and press down each one down onto the sheet, making sure they overlap a little so they stick together. 3️⃣ Drizzle cashew butter on top and use a spoon to spread it across the dates. Sprinkle on toasted coconut. 4️⃣ Melt chocolate with coconut oil and drizzle it on. Use a spoon to spread it around so it coats everything. 5️⃣ Sprinkle on more toasted coconut and pop the baking sheet into the freezer for 10-15 minutes, or until the chocolate has set. Remove from the freezer, chop the bark into 10 pieces and enjoy. 6️⃣ Store leftovers in the fridge or freezer. If you’re storing in the freezer, the dates will get pretty hard so let the bark sit out a few minutes before biting into it.
