@heykarabae: Easy weeknight dinner: Bucatini with #oystermushrooms and #broccoli in a creamy lemony sauce 🍋🥦 Oyster mushrooms (of course you can use tofu or whatever floats your boat) Leeks (or onions, shallots) Garlic (nonnegotiable and irreplaceable) Broccoli (don’t be afraid of the stems! If they’re too tough you can peel the outer layers and then chop them up) Heavy cream (coconut cream, cashew sauce) Lemon zest and juice CHEESE! (Did you know pecorino Romano and Parmesan aren’t vegetarian 🥲) Red pepper flakes Pasta of choice (I used bucatini) Sear mushrooms in olive oil with salt and pepper until browned and tender. Add sliced leeks and garlic and sauté until tender. Blanch broccoli for a few minutes. If you like it tender leave it in longer but I like my broccoli to have some crunch so I only left them in the water for 3-4 mins. Add them to the pan. Add heavy cream, lemon goodness, the mushrooms and your seasonings. Add in some of your grated cheese. Add cooked pasta with some more cheese and pasta water. Allow the sauce to thicken and pasta to finish cooking.
