Two ingredient mozzarella cheese. Recipe below. I like the simplicity of this recipe, and I am happy with the outcome. But I do think I'll stick to using rennet (vegetarian) for my future cheese making. I think the process took longer without it. Vinegar can substitute citric acid, and can be used in either this recipe or the more traditional. I think the vinegar does change the flavor of the whey and the cheese though. What do you think? Ingredients 1 gallon of milk 1 cup distilled white vinegar *you can cut the ingredients in half if you want a smaller batch. Recipe * Add milk too a large pot and heat on the stove to 110°(F) * Remove pot from the stove and pour in the vinegar. * Gently stir about 30 seconds. Milk will begin curdling. * Cover the pot with a lid and let stand 5 minutes. * If you feel like they whey is too milky, go ahead and add more vinegar, and let sit another 5 minutes. * Remove the curds from the whey, and get as much water out as you can. I let mine drain in the strainer for 30 minutes, and then strained with cheesecloth. * Break into two or three pieces for easier handling. * Return the whey in the pot (or use fresh water) to the stove and heat to 150-160°(F) * You can remove the pot from the stove, but may need to return to reheat the whey. * Place the balls of cheese into the hot whey for about 30 seconds at a time. Bring them out and squeeze excess water out, while also stretching and kneading the cheese. This takes time. Eventually the cheese will become somewhat elastic. * You can add salt to taste during this final shaping. * Final shape your cheese and place into cold water with a few ice cubes. Let rest 10-15 minutes. * Store cheese in water or in its whey in the fridge.
