Cinnamon Roll Recipe  Dough Ingredients: • 1 cup warm milk (110°F / 45°C) 2 ¼ tsp (1 packet) active dry yeast • ½ cup granulated sugar or 1/3 cup brown sugar  2 large eggs, room temperature  ⅓ cup unsalted butter melted ,or brown butter  1 tsp salt 4 - 4 ½ cups all-purpose flour 1tsp vanilla extract (optional)  *Add 1/4 cup heavy cream before baking Filling *   3/4 cup brown butter, or regular butter melted  *   1 1/4 cups packed light brown sugar *   2 Tbsp ground cinnamon *   1/2 tsp fine salt *   1/4 cup heavy cream - to be added later Frosting  * 8 0z cream cheese *   1/2 cup brown butter( or regular butter room temperature.) *   2 tsp vanilla extract or vanilla bean paste  *   1/4 tsp fine salt *   1 1/2 -2 cup powdered sugar (adjust to your liking )  *   2 Tbsp heavy cream or milk, room temperature *If you use brown butter for this recipe  let it completely cool down before adding your ingredients!!! I used brown butter for the dough,filling & icing !  For the dough :  Warm up the milk (110F ) add the yeast and let it sit until you see it foaming on the top( bout 5mins)  Start mixing ingredients with paddle attachment until it forms a crumbly dough. (If you don’t have a stand mixer just mix by hand ) Let the dough sit for 5 minutes then add the dough hook attachment and knead on low for 5 minutes (10 mins by hand ). Form dough into a ball and place in oiled bowl til double in size (about 90 minutes).  Roll out dough into a large rectangle. Spread on cinnamon filling. Roll into log and cut 12 rolls (as you can see I cut mine individually, which I feel was easier). Place the rolls in a  baking dish and let it rise again for 30 minutes. Preheat the oven to 350F during those 30 minutes. Then place in the oven and pour 1/4 cup heavy cream on top of the rolls & bake for 25 minutes. Once baked, spread on the icing while the rolls are still hot.  For the filling: Mix together the butter , brown sugar , cinnamon & salt until combined then set aside. The mixture should have a thick, paste-like consistency. Spread 2/3 of the filling in a thin layer across the dough.Mix 1/4 cup of heavy cream into the remaining filling, then spread it onto the bottom of the prepared pan to give them deliciously sticky bottoms. For the frosting:  Mix the  butter, room temperature cream cheese, 2 tsp vanilla extract or  vanilla bean paste , salt & heavy cream  together with a spoon or electric hand mixer.
