My favorite way to roast a whole chicken! Check out my recipe below: Herbs and Lemon Roasted Chicken - 1 (5-6 lb) whole chicken - 3 Tbsp unsalted butter, room temperature - 1 bunch of fresh thyme, set aside 2 Tbsp of thyme with leaves removed from stem and minced - 12 cloves garlic, set aside 2 Tbsp minced - Kosher salt - Freshly ground black pepper - 1/2 bunch of fresh cilantro - 2 lemons, halved - Olive oil 1. Preheat oven at 425F 2. Add the finely minced portion of fresh thyme and garlic to softened butter and mix well 3. Squeeze lemon juice all over outside of chicken and inside cavity 4. Generously salt and pepper the outside chicken and cavity of the chicken 5. Stuff cavity of chicken with bunch of cilantro, whole stems of thyme, whole garlic cloves, and half of one lemon 6. Add butter mixture carefully under the skin, careful not to rip skin.  7. Drizzle olive oil over the chicken 8. Use kitchen twine to tie the legs together. Put chicken, breast side up, in a roasting pan and put into oven.  9. Roast chicken at 425F for 20 mins. Then lower the temp to 350F for 1 hour and 10 mins (total time = about 17 mins per pound). Using meat thermator, check chicken reaches 165F internally in thickest part of chicken. 10. Remove from oven, let rest for 15 minutes, then carve the chicken. 11.
