Cut tofu and sweet potato and add to baking sheet! Spray with oil and add salt and pepper. Roast for 30 min. 2. While that bakes, Cook quinoa then mix with homemade or store-bought pesto. 3. Sauté kale, cut tomatoes and make the ranch in the blender or use any dressing you like. 4.
