In a cocktail shaker or mason jar, add oatmilk, espresso, coconut sugar syrup, and ice and shake for 20 seconds. 2. Pour into glass filled with ice and top with a dash of cinnamon. Coconut Sugar Syrup 1 cup coconut sugar 1 cup water 1. Combine coconut sugar and water in a saucepan over medium heat. Bring to a low boil, stirring frequently. Once sugar is dissolved, remove from heat. 2. Cool completely before storing. Store in a jar or airtight container in the fridge for up to 6 months. Yields 1½ cups simple syrup.
