Stuffed Bell Peppers Ingredients: 2 pounds ground beef (hamburger) 6 bell peppers 2 cups cooked rice 2 large cans tomato soup (you’ll use about 1 cup in the filling, the rest for baking) 1 yellow onion, diced 2–3 cloves minced garlic Salt and pepper, to taste Instructions: Preheat oven to 350°F (175°C). Prepare the peppers: Cut the tops (lids) off the bell peppers and remove the seeds and membranes. Place the empty peppers upright in a baking dish. Bake for 10 minutes to soften them slightly, then remove and set aside. Cook the filling: In a large skillet, brown the ground beef over medium heat until almost cooked through. Add the diced onion, minced garlic, and chopped pepper tops (optional) to the meat. Cook until the onions are soft and the beef is fully browned. Stir in the cooked rice and about 1 cup of tomato soup (from one of the cans). Season with salt and pepper to taste, then mix everything together well. Stuff the peppers: Spoon the meat-and-rice mixture into each pepper, pressing down to pack it in firmly. Add sauce and bake: Pour the remaining tomato soup (from both cans) into the baking dish, around and over the tops of the stuffed peppers. Bake for 20-30 minutes at 350°F, until the peppers are tender and the sauce is bubbling.
