@drizzleanddip: French toast crumpets with maple & pecans This recipe is so quick and easy and turns a store-bought crumpet into a delicious waffle-like treat. The crumpets I used were quite thick, so I first fried them in butter and then flash-baked them in my air fryer to ensure the middles were cooked through. You can cut them in half and skip this step if you prefer or uses crumpets that are thinner. Crumpets are quite sturdy, so you can soak them a little longer than bread. I topped them off with pecan nuts (my latest obsession), maple syrup and a scoop of vanilla ice cream. These were so delicious. Here is the full recipe. The egg/cream mix is enough to soak 3 – 4 crumpets Recipe: 3 – 4 store-bought crumpets (kept whole or sliced in half through the middle) 1 free-range egg ½ cup cream ½ tsp cinnamon 1 Tbsp Maple syrup + extra to pour over Butter for frying Roughly chopped pecan nuts Vanilla ice cream In a flat bowl add the egg, cream, cinnamon, and maple syrup and give it a whisk. Dip the crumpets in the cream mixture and turn them over a few times allowing them to soak for a minute or two. Heat a non-stick frying pan over medium heat and add a knob of butter. Once bubbling, add the crumpets (or sliced crumpets) and fry them on each side until golden brown. If you are using thick crumpets and would like a crisper outer layer, bake them in an Air fryer or oven at 180C/350F (or in an oven at 200C/400F) for 6 – 8 minutes flipping halfway through. Serve them warm topped with pecan nuts and a scoop of vanilla ice cream. Enjoy! #frenchtoast #crumpets #Recipe
