Tacos Perrones - my favorite taco of all time, and without question one of the best bites of my life - thanks to immaculate guidance of big bro @SanDiegoVille I have tried my hand at these a lot over the years - and this is what I got for a good homemade recipe. This one has been made to avoid cooking over open fire - but doing it that way will yield best results always. Beans: add 2 cloves of garlic to tbsp olive oil, add favorite mexican spice blend (usually coriander, cumin, chile powder, oregano, salt, pepper) cook till fragrant, add beans, simmer Meat: skirt steak (honestly im not too particular here, flank is ok, chuck is fine, just slice it thin) marinated in same spice blend, 1 cup oj, 2 limes of juice, 1/2 beer (other half for you), worcestershire (og recipe might use soy or maggi instead but I like worcester). 1 hour only marinate, dry w towels and sear. Tortillas 2 cups flour, 1 tbsp salt, 1 tsp baking powder, 2 tbsp lard or shortening, add hot water and knead a bit at a time till mix is wet but not sticky. Knead like crazy until the dough is beautiful. Cut and roll into small balls. Let rest covered for 10 mins before forming and cooking over high heat. Bonus pts: char jalapeños over your stove fire, chop, salt. Instructions on assembly are in video. The salsa I used was @Salsa El Gallo
