Salmon Hotpot Rolls Healthy Recipe! Such a fun collab with my good friend, the amazing @stephvnietea ! Go check her channel out!  Recipe: Salmon Hot Pot Rolls  	◦	 Whole leaf napa cabbage  	◦	1/2 pound Salmon, thinly sliced against the grain 	◦	1 small bundle spinach, cleaned 	◦	1 small red bell pepper, cut into matchstick strips  	◦	1 medium carrot, cut into matchstick strips 	◦	1 cup soybean or mung bean sprouts  	◦	1/2 package mushrooms  	◦	2 packs konjac noodles 	◦	Green onions, thinly sliced for garnishing Soup base: 	◦	1/4 cup low sodium soy sauce 	◦	1/4 cup mirin 	◦	Optional: 1/2 tsp sugar Dashi Stock: 	◦	3-4 garlic cloves  	◦	1 handful bonito flakes, about 1 cup 	◦	5 cups of water  Dipping sauce:  	◦	1 tbsp low sodium soy sauce  	◦	2 tbsp rice vinegar 	◦	Sesame oil to taste  	1.	In a pot, boil water, garlic and bonito flakes for 10 mins. Cover with lid for 10 mins. Strain. Set aside in the same pot. 	2.	To make the sauce for the broth, combine soy sauce, mirin and sugar. 	3.	For the dipping sauce, combine soy sauce, rice vinegar and sesame to taste. Set aside.  	4.	Prep and cut veggies and salmon.  	5.	Blanch cabbage leaves into boiling water for 10-20 seconds. Soak in ice bath to stop cooking. Strain and set aside.  	6.	To make the rolls: lay one leaf of cabbage, spinach, thinly sliced salmon, a little bit of carrots, bell peppers, and mung bean sprouts to your liking. Tightly wrap cabbage into a roll, tucking the sides of the cabbage leaf into the roll. It should hold all on its own and should be about 1 1/2-2 inches in diameter. Cut roll in half. Set aside. 	7.	Assemble using a clay pot or dutch oven. Layer all of the drained konjac noodles at the bottom of the pot. Then place rolls into pot cut side up until all of the rolls are packed in.  	8.	Place the pot over the stove then pour dashi stock (3-4 cups) and sauce into pot. Cover, bring to a boil and cook for 10-15 mins or until salmon is cooked through.  	9.
