— SOMETHING FISHY IS GOING ON HERE 🌚🐟 but you don’t have to worry about catching salmonella 😜⠀you need:- 1 block EXTRA FIRM tofu⠀for the marinade:- 1 cup vegetable broth- 2 sheets of nori (dried seaweed)- 3 tbsp apple cider vinegar- 25gr of sliced beets (i hate beets btw🥴)- 2 tbsp miso paste- 1 tbsp of sesame seed oil- 1 tsp garlic powder- 1 tsp salt- 1/2 tsp of turmeric⠀for the “skin”:- 1 sheet of nori- 1 tbsp sesame seed oil- 1/2 cup of cornstarch⠀1. FIRST OF ALL. make sure to press the tofu for about 30min. i use TOFUTURE’s tofu press. if you don’t have one, do it manually by wrapping the block of tofu in a clean towel, then put it on a large plate with a lip- put something heavy on top, weight it down further and leave it there pressing. why do we do this?! glad you asked… it squeezes excess water out so that the tofu can suck up more of the marinade and be more flavourful.⠀2. bring the vegetable broth and one crumbled nori sheet to boil. let it cool down.⠀3. blend all of the marinade ingredients together.⠀4. bring back the tofu, pressed already. cut it and make 4 long strings. take each string and place a chopstick on both sides; this way you get to slice it halfway without cutting all the way through, leaving the slices intact.⠀5. place the tofu in the marinade, making sure it’s covered. leave it in the fridge for AT LEAST 1h. PRO TIP: place the sliced side upside down (i learned this after my 2nd attempt, it absorbs better!)⠀6. put the cornstarch in a plate. use the other nori sheet to make strips about the same size of the tofu slices (for the skin).⠀7. take the marinated tofu out of the fridge. dunk the strips of nori into the marinade. then, GENTLY, remove each tofu piece and put it on top of its nori skin. dip it in the corn starch, slightly covering all sides (not too much!).⠀8. NOW, air-fry it for 15 min at 350 °F, adding some sesame seed oil on top. if you don’t have an air-fryer, you can also bake it at 400 ° F until heated through.
