Oyakodon (親子丼) is a classic Japanese dish traditionally made by simmering chicken and onions in a sweet and savory broth made of dashi, soy sauce, and mirin. Rice Cooker Oyakodon  2 servings Ingredients: - 1 cup rice + 2 cups water for cooking - 1 lb chicken thigh, diced - 1/4 yellow onion, thinly sliced - 1 tablespoon soy sauce - 1 teaspoon hondashi - 1 teaspoon mirin - Pinch of sugar - 2-3 eggs - Green onions and sesame seeds for garnishing Instructions: 1. Wash your rice, and add to your rice cooker with water. 2. To a bowl, add your soy sauce, hondashi, mirin, and sugar. Mix to combine. 3. Add your diced chicken and thinly sliced onions and toss to coat in the sauce. 4. Put onion & chicken mixture directly over the rice in the rice cooker, being sure to pour over any of the remaining sauce. Set aside the bowl to use next step. 5. Cook as you normally would cook rice. While it’s cooking, to your bowl, crack your 2 eggs and beat with chopsticks or a fork for just 20 seconds. 6. Immediately after the rice is done cooking, quickly open the rice cooker, pour your egg mixture over the chicken and rice and shut it again quickly. Turn on the rice cooker again (on regular rice setting) and allow to cook for 2 minutes. 7.
