I once did a 42 days dry Beef Ribeye Rack for Lady in Houston River oak and she loved it 💯👍

What are the ideal parameters for the cooler to make sure its not causing damage to the meat? Not a huge fan of age but I think its been bc ofsetups

I wet age, in the cry-o-vac, 21dys... Then dry age 21dys. I usually loose 33.3% moisture.
