@foodwithgeorge: Beef Mince cooked in Red Wine on Toast topped with Cheddar Cheese…Toast-it - Episode 11 This was absolutely delicious!!! If I had a restaurant this would be on the menu! Here’s what’s going on: Ingredients: Serves 2 50g beef dripping 1 onions, finely diced 400g beef mince 5 garlic cloves minced 1 tbsp tomato purée 300ml red wine 300ml good-quality beef stock 1 tbsp thyme leaves 2 small slices of sourdough 1 tsp white wine vinegar 1 tbsp dijon mustard 60g mature cheddar Salt and pepper Method: - This was absolutely delicious, if I had a restaurant it would be on the menu! - Put the beef dripping in a frying pan over a medium heat - Cook the onions over a low heat for 10 mins - Add the garlic and cook for a minute then - Add the beef, season and fry 10 mins stirring occasionally - Add the tomato puree and cook for another minute - Add the wine, increasing to a high heat and reducing until there is almost no liquid left - Add the stock, mustard, vinegar and thyme, bring to the boil and simmer for 15 minutes - Toast the sourdough, butter it, and serve with the mince and plenty of cheddar cheese - Enjoy!
