Did you know that you can make a starter with fruit instead of flour . Recipe : in a big jar with a tight lid : One big apple ( you can use grapes or any other fruits except the one with Protease Enzymes like Kiwi and pineapple which might break the gluten structure ) 2 3 cups water (cover 5cm above that)  tsp of honey or sugar  **place the jar somewhere warm** Shake the mixture it Twice or three times a day .  for 4 to 6 days until a Fizzy Carbonated Fruit Water Achieved . Breads made with fermented fruit water have been found to have up to 10% lower sugar and 12% higher dietary fiber than standard sourdough. It also potentially enhances the synthesis of B-group vitamins, such as B12 and folate, depending on the fruit used. * . Both: Effectively reduce FODMAPs and partially break down gluten, making them easier on the gut All right that was it. You might say 4 to 6 days. It’s already the same as making normal sound of starter with flour.  With this we didn’t have that much discard cause with the fruit is there is no feeding in discarding. It’s just daily shaking. Secondly, it’s just another ancient way of making bread which might give you some different flavors so give me a try and let me know how it goes .
