AD. Butternut squash ravioli with brown butter and sage I am a HUGE @Kerrygold UK fan so I am very happy that they have released their butter stick in the UK. The same rich, creamy, delicious flavours we love about Kerrygold, but in an easy to use stick shape. A new fridge staple! 360g / 3 cups 00 flour 5 medium eggs + 1 egg yolk Semolina/ plain flour for dusting 1 Kerrygold salted butter stick 230g / 1 cup cooked butternut squash (about 1/4 medium squash) 200g / 1 cup ricotta 50g / 1 cup parmesan   1 small garlic bulb 1/2 tsp salt  1/4 tsp black pepper 1/8 tsp nutmeg  Pre-heat oven to 180C/360F. Roast the garlic and butternut squash flesh down with 1 tbsp olive oil and a pinch of salt for around 35 minutes, or until soft. Once slightly cooled, place 1 cup butternut squash, garlic, nutmeg, salt, pepper, parmesan, 1 egg and ricotta into a food processor and blend. Leave to firm up in the fridge (around 3 hours). Make a well in the flour on a surface and adding your eggs. Start whisking and then slowly incorporate some flour in, thickening the egg. Use your hands/ pastry knife to start bringing the dough together. Knead for 8 minutes, adding a little more flour if it is too sticky. Once a smooth dough ball has formed, place an upturned bowl on top and rest at room temp for 40 minutes. Divide into four and use a pasta machine to roll out until paper thin. Get two long strips of pasta onto a floured sheet of baking paper. Spoon heaped tsps of filling on the pasta, with a gap in between. Then fold one pasta strip on top and seal with your fingers, pushing any air out. Use a knife/ stamp to cut the ravioli and repeat until all the pasta/ filling is gone. Once shaped, keep the ravioli on a few lightly floured sheets of baking paper. Boil in salted water for a few minutes (they will rise to the surface). In a frying pan add around 1/8 of the Kerrygold butter stick and fry your sage until crispy then remove. Allow the butter to start browning and then add the ravioli for a few minutes. Repeat this process by adding more butter and ravioli to the pan. Plate with a drizzle of the brown butter, crispy sage and black pepper.
