In a small bowl, combine the yeast, lukewarm milk, and 1 tbsp of sugar. Let it sit for about 5-10 minutes until frothy. 2.    In a large bowl, mix the flour, 1/2 cup sugar, and salt. 3.    Add to the yeast mixture, whisked egg and egg yolk, and melted butter to the dry ingredients. Mix until a dough forms. 4.    Knead the dough for about 8-10 minutes until smooth and elastic. 5.    Place the dough in a greased bowl, cover, and let rise for 1.5-2 hours or until doubled in size. 6. Roll out the dough into a rectangle, spread with filling mixture. 7.    Roll up the dough tightly and cut into rolls ( can make 6-12). 8.    Place the rolls in a greased baking dish, cover, and let rise again for 30 minutes (or cover and refrigerate overnight). 9.    Preheat the oven to 350. 10.     After the rolls have rested, pour 1 tablespoon of heavy whipping cream over each roll. 11.     Bake for 25-30 minutes until golden brown. 12.    Melt sugar and butter: Heat sugar and butter together in a saucepan, stirring until the mixture turns smooth and amber 13. Slowly pour in heavy cream, stirring until fully combined Stir in pecans, walnuts, vanilla, and salt. Cook for 3-5 minutes to thicken.  Allow sauce to cool slightly before drizzling over  cinnamon rolls.
