@meggrowsplants: Homemade pasta with garden fresh roasted red pepper sauce and burrata for dinner 🍝 i have an abundance of peppers in the garden right now, and this was a delicious way to use some of them up! Pasta dough: 2 cups flour 3 eggs 1/2 tsp salt 1/2 tbsp olive oil Pasta sauce: Roast a pan full of sweet red peppers, and a few chili peppers if desired, one onion, 6 to 8 cloves of garlic drizzled with olive oil and sprinkled with salt at 400 degrees until soft and charred. Transfer to a food processor or blender. Add about 2/3 cup heavy cream, and about 1/2 cup basil leaves. Blend and add more heavy cream or vegetable broth until desired consistency. Transfer to a pan and add desired amount of parmesan cheese to taste. Cook pasta, and add pasta to pan with pepper sauce, allowing some of the pasta water to mix in as well to make it creamy.
