Did you know Sriracha was originally created in South East Asia? The name itself originates from a region of Thailand called Si Racha in the Chonburi province. What you’ll need: 450-500 grams about 1lb red chili peppers (I used Fresno) 1/2 - 3/4 cup vinegar (depends how sour you like it) 1/2 cup sugar (less if you want it less sweet) I prefer palm sugar 1/2 tbsp garlic powder (optional) 15 cloves garlic 1/2 tbsp sea salt or coarse salt *TIP: to make the sauce thick reduce from medium to medium low heat.
