@dish_by_rish: Masala Veggie Pancakes, inspired by yachaejeon (Korean Vegetable Pancakes) These crispy vegetable pancakes are combined with spices commonly used in Indian cooking to add another dimension of flavour. We've got spices like Kashmiri chili powder, turmeric, coriander powder, mango powder and more. They're spicy, crispy, filling, and so more-ish. They're also incredibly easy to make and you can pretty much use any vegetables you've got on hand. I think carrots, courgettes, peppers, mushrooms, and onions always work well. Plus chillies, gotta have the green chilli. We're also serving these up with one of my all time favourite chutneys, a coconut and coriander chutney. It reminds me of 'dosa day' almost every Saturday as a kid at my nani's (materal grandmother) house. A chutney I still make fairly often as it just goes with so many things.
