✨Persian Ash Reshteh✨ 1 large onion, diced 2 tbsp neutral cooking oil 2 tsp turmeric Salt and pepper to taste 16 ounces red kidney beans  16 ounces chick peas I cup dry lentils  1 cup chopped green onions 1 cup finely chopped dill  2 cups finely chopped fresh parsley (I use a food processor for this) 8 oz frozen spinach (no need to thaw) 150-175 grams wheat noodles  2 Tbsp all purpose flour 2-3 Tbsp dry mint for garnish  Liquid whey (Kashk) to garnish  Fried onion for garnish  Heat the oil in a large pot, and saute the chopped onions until translucent. Add turmeric and stir for 2 minutes.  Pour 10 cups water and bring to a boil Add the herbs, salt and pepper and reduce the heat. Cook for 30 minutes. Add the cooked beans to the pot.. Break the noodles in half or thirds and add. Stir a few times, cover the pot halfway and let it cook for 30 minutes Mix flour with 1/2 cup cold water and add to the ash, stir well.  Continue cooking on low heat, stirring from time to time. Season to taste  If you find it’s too thick for your liking, add a little boiling water.   When ready to serve, add to bowl.  We usually add some liquid whey/fermented yogurt to this and then garnish with fried onions and a mint butter mixture (see below)  If you can’t find liquid whey you can omit entirely or add a little bit of yogurt or sour cream.  Mint Butter Noted:  Sauté mint in a few tbsp butter until it darkens in flavour. We use this just as a garnish to decorate the soup and it adds a touch of flavour!
