Grind the coconut cookies in a food processor. Add the melted butter and mix everything together until you get a cohesive mixture. Press the cookie dough into a baking dish lined with parchment paper. Refrigerate for 30-60 minutes, or if you want to quicken the process, you can place it in the freezer. Heat the heavy cream and vanilla sugar in a saucepan until it's almost boiling. Remove it from the heat and add the pieces of white chocolate. Let it sit for 1 minute, then stir until it becomes a smooth. Add the grated coconut and mix until combined. Pour the coconut mixture into the baking dish and spread it evenly. Garnish with fresh raspberries and sprinkle a bit of grated coconut on top. Allow the pie to set in the refrigerator for at least 4 hours. TIPS You can substitute vanilla sugar with vanilla extract.
