While the lamb marinates, throw together a quick-and-easy Minty Salsa Verde and some delicious Crispy Smashed Potatoes cooked in @berettafarms beef tallow for the ultimate Sunday Roast. I use a @MEATER probe to accurately track internal and ambient temperatures on my phone as the lamb slowly cooks to exactly 125F on my @Traeger Grills Timberline XL. Finish it off in a hot carbon-steel skillet with some more beef tallow, fresh herbs and garlic until it hits 135F. The lamb takes on some irresistible wood-fired flavour from the Traeger and has a perfect, edge-to-edge medium-rare center. If you don’t like lamb, you can substitute prime rib, pork rib racks, tomahawk steaks, venison chops, or entire tenderloins.
