aren't you supposed to pressurize the cans? so bacteria isn't present?

Question… i canned my salmon in pint jars i haf 50lbs I added no juice to any jars and it cooked down and left about 3inches of space in each jar- is that ok?? I did can it properly @12lbs for 100min
