@afternoonexpress: This Clemengold, Burrata and Crispy Prosciutto Salad is a spring essential 🍊 Find the full recipe here: Serves: 4-6 Time: 30 minutes INGREDIENTS For the ClemenGold dressing: ½ cup olive oil 1/3 cup juice of ClemenGold 3 tbsp white wine vinegar 1 garlic clove, minced 1 tbsp Dijon mustard 1 tbsp honey Salt Pepper For the salad: 70g Prosciutto 180g Herb salad leaves 2-3 ClemenGold mandarins 1 large avocado, pitted, peeled and sliced 2-3 balls burrata cheese METHOD Preheat the oven to 180C. For the dressing; In a bowl, whisk together all the ingredients. Season to taste then set aside until ready to use. Lay the slices of prosciutto out on a baking sheet and drizzle a bit of oil. Cook in the oven until golden and crispy, about 5 minutes. Turning over halfway through cooking for even crisp. Add the salad leaves to a serving platter. Cut the skin off the mandarins, slice into rounds and place on the salad. Top with the avocado, burrata and crispy prosciutto.
