@homegrownkosher: Honey Lemon Baby Kale Salad with Fresh Figs Ingredients: 8 cups baby kale 1 Shallot, sliced super thin 1 Avocado, halved and thinly sliced 6-8 fresh figs, quartered Lightly salted plantain chips Dressing (see recipe below) Instructions: Layer Baby Kale, sliced shallot and avocado, and figs, in a salad bowl Break plantain chips into pieces and sprinkle on salad Drizzle with as much dressing as desired, or serve on the side Dressing: Ingredients: 6 Tbsp freshly squeezed lemon juice 1/2 tsp fresh lemon juice 1/4 cup honey 2/3 Cup Extra Virgin Olive Oil 1/2 tsp Kosher Salt 1/4 tsp freshly ground Black Pepper 1 tsp Garlic powder Instructions: Combine all dressing ingredients in a food processor bowl.
