@chefthombateman: Peanut Rayu (Japanese Peanut Chilli Oil) this stuff is ridiculously addictive.. I love it. It’ll last for 6 months or even more in a fridge but I guarantee you’ll eat it all way before then. 100g peanuts 12 garlic cloves thinly sliced 200ml neutral flavoured oil 2 tbsp Korean pepper flakes (or chilli flakes) 1 tbsp chilli powder 1 1/2 tbsp light brown sugar 2 tsp salt 2 tbsp sesame sides 2 tsp sesame oil 2 tbsp dark soy sauce 1. Roast the peanuts for 15 mins at 200c/400f allow to cool 2. Add the thinly sliced garlic to the oil while cold and bring it up to temperature over a medium heat until the garlic is golden and crisp. Remove from the oil and heat to 130c 3. Add the chilli flakes, powder, salt and sugar to a boil pour over the hot oil and mix well. Allow to cool. 4. Stir in the the peanuts, garlic, sesame seeds, sesame oil and soy #peanut #chillioil #chillioilrecipe

Sorry for my ignorance, but what do you do with it? If you cook with it, how’s it different then just adding the ingredients instead?

Silly question but how long will this stay good for, it’s all fine until the soy sauce component or does the salt mean it’s fine either way?

Love your recipes Thom! When I added the hot oil, the sugar caramalized & turned into a brick… Do you have an idea what I did wrong?

That’s not Japanese style, rayu which means chili oil in Japanese specifically refers to Chinese chili oil
