Lunch sorted! You need to try these Chilli Con Carne Bowls!  Easy! Delicious! Healthy! Packed full of protein!  Recipe below! I doubled the recipe in the reel!  1 x @mingleseasoning chilli con carne seasoning  1 x medium red capsicum diced 1 x medium carrot diced  500g lean beef mince  1 x can of kidney beans rinsed  1 x can chopped tomatoes  1 x cup beef stock or bone broth (I’m using Nutraorganics beef bone broth)  2 x tablespoons mingle tomato sauce (or you can use tomato paste)  4 cups of sweet potato diced  Little olive oil  Mingle garlic and herb seasoning  *you can use rice instead of sweet potato but will change the macros listed*  100grams of light tasty cheese  2 x tablespoons of green style protein yogurt when you have reheated and eating.  Pre-heat oven to 180degrees Celsius  Place djced sweet potato on a baking tray and drizzle a little olive oil and sprinkle of garlic and herb seasoning  Roast in over for 30-40 mins until cooked through and golden.  Heat a large pot or skillet over medium-high heat and add a little oil  Add onion and cook for 2-3 mins until soft and translucent  Add beef and cook until browned  Add sauce and chilli con carne seasoning and stir  Add veg, kidney beans, stock and tomatoes and stir.  Simmer for 20mins until veg is soft and sauce has thickened Place cooked sweet potato in your containers and top with chilli mince and sprinkle over a little cheese When reheated I like I add a little protein Greek yogurt and YUM!
