@sooziethefoodie: I’m so excited to show you all part two of the pinecone jam saga! I still can’t decide if the whole situation was the funniest or the most embarrassing thing to ever happened to me 😂🙈 I really wanted to make pinecone jam and @Specialty Produce sent me these pinyon pinecones to try! These pinecones look so cool- they are green, spikey, and have what looks like little crystals growing on the outside. They smell just like Christmas. Pinecone jam is pretty easy to make like most things I do it’s just extremely time consuming! The first step is to boil the pinecones for 5 minutes to remove the goop that will float on the top (similar to when boiling meats). They you discard that water and add fresh water and sugar to a pot 2:1 ratio water to sugar. I added in some cinnamon, nutmeg, and cloves to the sugar and water when it was heating up then removed it before adding in the pinecones. This was for a little extra flavor! Now the making of the actual jam is what took FOREVER! Pretty much what you have to do is boil then let cool then boil over and over again until you get the right syrupy consistency. The upside is that my house was smelling really good throughout the whole process. Once the jam was finally finished the result was magical. It had much more of a pinecone flavor than the first time I tried it. The texture was syrupy and delicious! I decided to pair the pinecone jam with labneh because I love tangy/ creamy ingredients mixed with sweet sauces! I added a little bit of olive oil, smoked salt, and thyme then used some leftover focaccia roasted in brown butter to dip in! This was an incredible experience all together and I’m so thankful to finally be able to say that I have made my own pinecone jam 🥹 #pineconejam #pinecone #pineconesyrup
